Tempeh "Mock Tuna" Salad

Ingredients
3 cups water1 Tbsp. salt8 oz. plain tempeh1 tsp. Old Bay seasoning or curry powder1/2 c. finely chopped celery1/4 c. finely minced onionjuice from 1/2 lemon1 tsp. dried dill weed1/4 c. vegan or light mayo1 1/2 tsp. dijon mustard1 Tbsp. soy sauce1/2 tsp. garlic powder
Directions
Makes 4 servings

Boil about 3 cups water in a small pot (enough to cover tempeh). Add the salt and place the whole tempeh cake in the boiling water. Reduce heat to medium and let tempeh simmer for about 20 min. Remove tempeh, pat it dry, and sprinkle one side with the Old Bay or curry. Let it sit for 10 min. and use a fork to break tempeh apart into small pieces. Add celery, onion, lemon juice, and dill to the tempeh and mix. In a separate bowl, wisk mayo, mustard, soy sauce, and garlic powder. Add to tempeh and mix well.
