Layered Enchilada Bake

Ingredients
1 lb lean ground beef1 large onion, chopped2 cups salsa1 can black beans, drained and rinsed1/4 cup fat free Italian dressing2 tbsp taco seasoning mix6 8-inch flour tortillas1 cup reduced fat sour cream1 8-ounce package 2% Mexican style shredded four cheese
Directions
Preheat oven to 400. Brown meat with onions in large skillet on medium-high heat; drain. Add salsa, beans, dressing and seasoning mix; mix well.

Arrange 3 tortillas in a single layer on the bottom of a 13x9-inch baking dish; cover with layers of half each of the meat mixture, then sour cream, then cheese. Repeat all four layers. Cover with foil.

Bake, covered, 30 minutes Remove foil. Bake an additional 10 minutes or until casserole is heated through and cheese is melted.

Let stand 5 minutes before cutting to serve.

    I make this with extra lean ground turkey and hot salsa for a zing! It makes a lot and is good and filling. Serve with fresh lettuce and tomatoes to up the veggie count. - 2/16/09
