Sweet Potato Bacon Soup

Ingredients
Sweet potato, 4 sweetpotato, 5" longButter, salted, 3 tbspShallots, 8 tbsp chopped*Campbell's low sodium chicken broth, 3.5 cupBacon, .5 unit, cooked (yield from 1 lb raw)Sage or Rosemary (1/4 cup chopped, loose)
Directions
Peel, cube and boil sweet potatoes until tender. Meanwhile cook bacon until crisp. Remove bacon from pan and add chopped shallots and butter and saute). Use white wine to deglaze if necessary. Drain and mash sweet potatoes, add chicken broth. Serve and garnish with bacon (chopped if desired).
