Banana Nut Bread

Ingredients
1/2 c. shortening1 c. granulated sugar2 eggs1 c. bananas, mashed1 tsp. lemon juice2 c. all-purpose flour1 t. baking soda1 c. walnuts, chopped
Directions
Preheat oven to 350º F.

Cream shortening and sugar together. Blend in eggs. Add lemon juice to bananas and add to creamed mixture until well blended. Stir in flour and baking soda until combined. Stir in nuts.

If making into one loaf - pour batter into greased loaf pan and bake for 45-60 minutes, until golden brown or toothpick pulls clean from center.

If making into smaller loaves - pour about 1 cup of batter into four greased mini loaf pans and bake for 45-60 minutes, until golden brown or toothpick pulls clean from center.

** It's rare that I've ever had to cook the bread the full 60 minutes. Set your timers at the 45 minutes (earlier if you're oven tends to run a little hotter or if you're cooking with convection) and start checking the loaves periodically after the 45-min. mark - this way you'll be sure to get perfectly baked loaves.
