6 eggs1/4c flour1t baking powder1/4t salt1/4t pepper1/2t italian seasoning1c milk1c low fat cottage cheese4oz low fat cream cheese cubed5oz lowfat cheddar cheese cubed
Preheat oven to 350. Spray a 9x9 inch baking pan with vegetable spray.
In a large bowl beat the eggs until frothy. Whisk in flour, baking powder, salt, pepper, italian seasoning, milk, and cottage cheese. Stir in cubed cheeses. Pour into pan. Bake for about 40 minutes until puffed, golden and set. Makes 8 servings.

The consistency was nice & fluffy, but the title "cheesy" is quite misleading (def add alot more cheese if you love it like this WI gal). I added broccoli, red & orange peppers to the recipe and cooked it for an additional 10 min on convection (over the regular baking time). Also bland. - 6/1/11
