1/2 C - Liquid eggs (egg beaters)1/4 C - Cheese, shredded1 C - Broccoli Chopped small3 TBS - Onion chopped3 TBS - Salsa Great Value (Wal Mart)4 slices - Ham, smoked lunchmeat
Warm the slices of ham in a small frying pan. Remove the ham from the pan and set to the side. Pour the liquid eggs into the frying pan, cooking at low to medium heat. While the eggs are cooking, place the chopped broccoli on a plate with a few drops of water, cover the broccoli with a bowl and place in the microwave for about one minute. The broccoli should be bright green when steamed. When the eggs are brown on one side flip them over. Place half of the cheese on half of the circle of eggs in the pan. Place the ham, onions, and broccoli on the cheese. Place remaining cheese on top of the other ingredients. Fold eggs over to form the omelet. place the salsa over the omelet. Makes 1 omelet.
