Basic Risotto Starter

Ingredients
* *Arborio Rice (Risotto Rice), Dry, Uncooked, 2 cup (remove) * *Fresh Sweet Onion (1 Medium Raw), 1 serving (remove) * Butter, salted, 1 tbsp (remove) * Olive Oil, 1 tbsp (remove) * Chicken Broth, 4 cup (8 fl oz) (remove) * White Wine, 4 fl oz (remove) * Milk, 1%, .25 cup (remove)
Directions
Melt butter and olive oil in pan and add onions. Saute a few minutes and add any other veggies or meat you wish. Once slightly softened, add the rice. Mix to coat and stir until rice becomes a little translucent. Add the wine and cook down. Heat the broth and add one cup at a time until it is absorbed-about 20 minutes. Keep stirring and keep an eye on it! The rice will get creamy and soft when cooked. Add the cheese and milk and serve warm. Makes about 8 servings.
