Carrot Pineapple Bread

1 1/2 cups all purpose flour1 teaspoon baking soda1 teaspoon cinnamon1/2 teaspoon nutmeg1/2 teaspoon salt2 eggs1/2 cup canola oil1/2 cup brown sugar1 1/2 cups carrots, finely grated8 ounces crushed pineapple, in juice un drained
Preheat oven to 350 degrees. Spray an oblong cake pan (7 x 11 or 9 inch square) with cooking spray.
Sift together flour, baking soda, cinnamon, nutmeg and salt.
In another bowl, beat the eggs with the oil then blend sugars to egg mix. Add carrots, pineapple with juice and mix well. Stir in the dry ingredients. Pour into prepared pan and bake for 25-30 minutes or until cake rises.
