Vegetarian Pho Broth

Ingredients
2 cups water1 clove of garlic, sliced1 inch of ginger, sliced1.5 tsp Soy sauce (0.5 Tbsp)1 Tbsp rice vinegar (unseasoned)0.5 tsp Sambal Olek (hot pepper paste).25 of a lime
Directions
Combine all ingredients except lime and set to boil for 10 minutes, covered. I chop my veggies and prep the tofu while it's boiling. Then remove garlic and ginger slices and pour over chopped veggies and tofu, squeeze lime juice into soup, wait 5 minutes and enjoy!

Pho usually also has vermicelli noodles at the bottom - I omit these and use extra veggies instead.
