Breakfast Burrito

Ingredients
3 cups Mushrooms1 cup Onions1 cup Peppers3 medium size Potatoes10 Eggs10 Egg whites1 1/4 cup 2% cheddar10 Mission Large tortillas
Directions
Slice all of your veggies. Spray a large nonstick pan with Pam. Add your potatoes and cook over medium heat covered until they start to get crispy. Add your onion and cook for 4 minutes, add peppers and cook for another two minutes then add mushrooms. Cook until mushrooms are almost cooked through remove from pan and season with salt and pepper. Wipe out pan, spray again and scramble eggs unfilled they're the desired doneness. Divide between 10 tortillas and enjoy. Makes 10 servings.
