Pumpkin Spice Bread

Ingredients
3 1/2 cups Whole Wheat Flour1 16 oz can Libby's Canned Pumpkin1 cup Sugar1/2 cup Honey2-3 tsp Splenda or other sweetener6 Egg Whites (large)1/2 cup Margarine (room temperature)1/2 cup Water1 tsp Nutmeg1 1/2 tsp Cinnamon1 tsp Salt2 tsp Baking Soda
Directions
Preheat oven to 350 degrees F. Grease two 9x5 loaf pans with non-stick spray.

In a large bowl combine flour, sugar, salt, and baking soda.

In separate bowl combine pumpkin, margarine, water, honey, sweetener, and spices. After the wet ingredients are mixed well, slowly add in egg whites.

Combine wet and dry ingredients together, mix well. Pour the batter into pans and bake for 1 hour, or until you can insert a toothpick in the middle and it comes out clean.

Makes 2 loaves, with 12 servings per loaf (24 servings total).
