Spinach, zucchini, mushroom fritata

Ingredients
1 cup diced onion2 cloves minced garlic1/2 cup sliced potato1/2 cup sliced zucchini1 4-oz can mushrooms, drained1 cup frozen spinach4 eggs1/4 tsp Canadian steak seasoning1/4 c grated Parmesan cheese
Directions
1. Cook onions, mushrooms, zucchini, potatoes until slightly browned and tender. Add spinach. Cook until spinach is no longer frozen.
2. In a separate bowl, whip eggs til creamy in color. Add to skillet. Add cheese and seasoning. Stir until eggs are cooked

Makes 4 1-cup servings.
