Ground Beef and Bean Enchilada Casserole

1 lb extra lean ground beef1/2 cup finely diced onions2 cloves chopped garlic14 oz can petite diced tomatoes, drained4 oz can green chilis16 oz can spicy jalapeno refried beans19 oz can la victoria enchilada sauce16 la favorita corn tortillas1 1/2 cup shredded mexican cheddar jack cheesesalt & pepper
Preheat oven to 350.
In a large skillet brown ground beef with onions, garlic, salt and pepper.
Drain grease.
Add tomatoes. green chilis, 1/2 cup of enchilada sauce and refried beans to the skillet.
Mix well.
Reduce heat and simmer for about 5 minutes.
Lightly spray a 9 x 13 pan.
Dip a tortilla in enchilada sauce and lay in the bottom of the baking pan.
Continue until you have a single layer of tortillas covering the bottom of the pan. (Note I used 4 tortilla per layer cutting one tortilla into thirds to fill in.)
Add 1/2 of the meat mixture in an even layer.
Sprinkle with 1/2 cup of cheese.
Lay an even layer of dipped tortillas as before.
Add the remaining 1/2 of the meat mixture in an even layer.
Sprinkle with 1/2 cup of cheese.
Lay an even layer of dipped tortillas as before.
Spread remaining enchilada sauce on top.
Sprinkle with remaining 1/2 cup of cheese.
Bake at 350 for 15 to 30 minutes or until cheese is melted.
