2 Tbsp olive oil12 ounces salmon or chicken if prefer2 C. Classico tomato basil spagetti sauce16 pitted Kalamata olives1Tbsp capers1/4 C grated parmesan cheese8 ounces whole wheat spaghettiSalt and pepper to tasteOptional ... red pepper flakes, fresh chopped basil
Cook Pasta while preping and cooking rest.
Remove skin from salmon, cut into cubes. saute in skillet with olive oil for 5 minutes, add next 3 ingredients and simmer, cook atitional 5 minutes or till salmon is done. Arrange 1C. cooked pasta on each plate and top with salmon and sauce as well as 1 Tbsp cheese.
