Cornmeal Pancakes

Ingredients
1/2 c yellow cornmeal1 1/2 c cold water1 3/4 to 2 c fat free milk2 c all purpose flour1/3 c splenda sugar blend for baking1 tsp salt1 tsp baking powder3/4 tsp baking soda1/4 c eggbeaters2 Tbsp margarine
Directions
Makes 12 pancakes. 1/3 c = 1 pancake.

In a small pan, stir cornmeal into cold water until no lumps remain. Bring to a boil, lower the heat to medum and cook about 5 minutes.

Sift together the flour,sugar, salt, and baking powder.

In a large mixing bowl, pour in the cooked cornmeal. Stir in the butter. Disolve the baking soda into 1 3/4 c of the milk and then pour into cornmeal/butter mixture. Add the flour mixture with the egg and mix just until blended. Add the additional 1/2 c milk to adjust how thick or thin you want your pancakes to be..

These have so much flavor I don't use any syrup. They also make great snacks, because of their tastiness.
