Spiced Chicken Balti

1 tbsp Sunflower Oil2 tbsp (10g) Balti Paste1 x Medium Onion2 x Skinless Chicken Breats40g Quinoa, uncooked200g, Canned Tomatoes, chopped1 x Chicken bouillon cube or 1tbsp powder25g Unsalted CashewsBunch Coriander, fresh or 1 x tbsp dried
1. Heat the oil in a large pan, fry the onions for 5 minutes until golden and softened, then tip onto a plate.
2. Add the chicken breasts to the pan, browning for a few minutes on each side, then stir in the balti paste, uncooked quinoa and onions.
3. Sizzle for a few minutes, then pour in the tomatoes and stock and give everything a good mix. Bubble for 25 minutes until the quinoa is tender and saucy.
4. Stir in the cashews and most of the coriander, season with salt and pepper to taste, then pile into bowls and scatter over the rest of the coriander (if using fresh) to serve.
