Avocado & Quinoa Salad

Ingredients
2 avocados, cut into pieces1 cup quinoa1 medium tomato, cut into pieces1/4 cup diced red onion2 fresh basil leaved, choppedDRESSING INGREDIEINTS1/3 cup olive oil1/4 Tsp cayenne pepper1 garlic clove, mincedjuice of two limessea salt and pepper to taste
Directions
In a small saucepan, bring two cups of water to a boil and add rinsed quinoa. Cover and simmer for 15 to 20 minutes or until water is absorbed. Cool and set aside. Mix the dressing ingredients together in a small mixing bowl. Mix all the other ingredients together in a large mixing bowl and then cooled quinoa. Toss with dressing. Chill and serve.
