Italian stlye egg soup ( with Meatless chicken)

Ingredients
1 can Vegetable broth ( PC Organics)1 1/2 cups water1 meatless Chicken breast- pre heated and cubed (PC Blue Menu)1 tsp Olive Oil1/4 cup small soup pasta (Mini bows)2 large eggs1/4 cup frozen green beans1/4 cup onions, sliced3 baby carrots, cut in matchsticks1/4 cup frozen spinach1 tsp soy sauce1 tsp red pepper flakes2 garlic cloves ( or frozen equivalent )2 tsp dried parsley ( or fresh chopped)
Directions
saute garlic, onion, carrot and green beans in oil in the bottom of your soup pot until softened. add broth, water, soy sauce, red pepper flakes and spinach. bring to a boil, add soup bows and meatless chicken. reduce to medium heat for aprox. 10 minutes, until pasta is almost ready. (in the meantime, scramble eggs in a bowl) add parley and bring back to a boil.
slowly add egg to boiling soup in " ribbons". continue boiling, stirring, for an additional 2 minutes to cook the egg.
makes 6 1/2cup side servings (nutritional info) or 3 1cup meal servings.
