Low Carb Mexican Meatloaf

Ingredients
Ground beef, lean, 16 oz (remove)Cheddar or Colby Cheese, Low Fat, 1 cup, shredded (remove)*Diced Tomatoes & Green Chilies (canned) 2.5 srv - Rotel, 2.5 serving (remove)Salt and Pepper to taste1 tsp oregano
Directions
Makes 4 loafs
I usually mix all ingredients together, then split into four loaves. Bake at 375 for 30-45 mintues. My oven is slow, so you may have to adjust to your oven. You can top with low fat sour cream, avocado just add to your totals.
