Green Bean Salad

Ingredients
1 lb of green beans fresh1/2 Red Pepper (julienned)1 Yellow Pepper (julienned) 10 cherry tomatoes halved1 cup fresh parsleyFor Dressing: 1/4 cup olive oil1/4 cup lemon juice1/4 teaspoon dijon mustardsalt and pepper to taste
Directions
Serves 4
Boil green beans until crisp (about 4 minutes)
Cut peppers into strips and halve tomatoes
Cut up parsley

Mix all veggies into a bowl
For dressing, mix olive oil and lemon juice. Stir in dijon mustard. Add salt and pepper and stir all together

Pour dressing over veggies. Chill for an hour before serving.
