Round Steak w/ Vegetables slow cooker recipe

Ingredients
20 oz round steak - trimmed of all fat, cut into 4 pieces1/4 tsp black pepper1/8 tsp salt (I used sea salt)2 cups baby carrots2 cups mushrooms (almost a whole 8 oz pkg)1 large onion, cut into wedges1 14.5 oz can Diced tomatoes w/ basil, garlic, and oregano, nsa (Del Monte's)3 Tbl. tomato paste1 tsp. Italian seasoning1 Tbl. Worcestershire sauce1 medium zucchini, halved lengthwise and cut into slices
Directions
Place meat, pepper, salt, carrots, mushrooms, and onions in slow cooker. Mix the tomatoes, tomato paste, Italian seasonings, and Worcestershire sauce together in a medium bowl. Pour over meat and vegetables in slow cooker.

Cover and cook on low- heat setting for 8 - 9 hours or 4-4.5 hours on high. Add the zucchini the last 30 minutes of cooking.
Dietary exchanges- 5 very lean meat, 3 vegetables, 1.5 fat.

This would be great served with mashed potatoes, rice or even your favorite pasta.

    This smells so wonderful while it is cooking! Perfect combination with brown rice under the veggies. I don't often eat beef, but this recipe is definitely going to be made again in my home! - 1/15/12
