Ingredients:Extra Virgin Olive Oil, 2 tbsp Garlic, 1-2 clove(s), crushedCumin, 1 tbsp Pepper, red or cayenne, 1 tbsp Yellow Sweet Corn, Canned,, one can, with liquidCanned Tomatoes, one can, with liquidGreen Chili Peppers, 1 can, with liquidBlack Bean, 2 cans, with liquid1 can= 15oz (?); there should be 3.5 1/2 cup servings per can
*NOTE: Do not drain the canned goods, using the liquid in the can elilminates the need for vegetable broth.
Though you could drain and rinse the canned goods and use low-sodium broth if you wanted to cut down on the sodium.
Very simple: sautee the spices and garlic in olive oil for a few minutes, then add the beans, tomatoes, corn, and chilis, and simmer.
