Ingredients
One cup uncooked brown riceOne can of black beans (822 grams)Two small brown onionsOne Bunch Cilantro2 tablespoons of olive oil
Directions
Boil two cups water; add brown rice, cover and reduce to a simmer. While the rice is cooking, dice two medium brown onions. Heat the olive oil in a pan and saute the onions until they just begin to soften. Finely chop the cilantro. If using canned beans, heat the beans, then combine all ingredients in a bowl and stir to mix thoroughly. Serves eight.
