Amish Friendship Banana Bread or Muffins (healthy substitutions)

Ingredients
1c Amish Friendship starter1c applesauce3 eggs1/2t salt1t vanilla1T cinnamon1c sugar2c flour1.25t baking powder.5t baking soda2 ripe bananas, mashed1t ground nutmeg1/2t ground cloves3/4c walnuts, chopped coarsely
Directions
Preheat oven to 325.

Mix wet ingredients in a non-metallic bowl.
Mix dry ingredients separately, then add to wet.

Spoon into muffin tins (makes 30 or so) or do like I do: 16 muffins and 1 loaf pan.

If your muffin/loaf pans are not non-stick, grease them lightly with canola oil and sprinkle with cinnamon sugar or wheat flour.

Bake muffins 20-30 minutes at 325 degrees, until knife inserted in center comes out clean.
Bake bread one hour or until knife comes out clean.

Let cool in pan until bread pulls away from sides, then turn out onto a cooling rack.
