Slow Cooker Gingered Sweet Potato Soup

Ingredients
4 cups sweet potato, cubed2 cups leeks, sliced2 Tbsp Ginger, sliced or grated1 Tbsp Olive Oil6 cups chicken stock, homemade2 Tsp coriander1Tbsp.cumin1/2 tsp. cayenne pepper1/2 tsp black pepper
Directions
Makes 10-1 cup servings

Saute the leeks and the ginger in the olive oil.

Place everything into a 4 litre/quart slow cooker and place on low for 4 hours.

Blend until smooth with a stick blender.

A dollop of yogurt can be added at serving if desired
