Oriental Lentil Salad

Ingredients
1 cup Lentils2 cups vegetable stock2 cups water2 tbsp sesame oil2 tbsp soy sauce4 tbsp vegetable oil2 tbsp rice vinegar2 cloves chopped garlic1 sliced hot pepper3 tbsp minced ginger2 green onions chopped1 can mandarin oranges drained
Directions
cook lentils in vegetable stock and water for 20 minutes. Drain and rinse in cold water. Combine all other ingredients except onions and oranges in bowl and whisk together. fold oranges and onions into lentils and toss with dressing.
