Vegan Pancakes w/ coconut and pecans

Ingredients
3/4 cup all purpose flour2 tsp baking powder1/4 tsp salt1/4 cup chopped pecans (or walnuts, etc.)1/3 cup shredded coconut1 cup vanilla soy milk~ 1/3 tbsp oil for pan
Directions
In a medium sized bowl, mix the flour, baking powder, salt, coconut, and walnuts. Pour milk into flour mixture and gently stir together until just mixed. Pour batter into a hot, non-stick pan on medium heat and let sit until the center starts to bubble and become sturdy. Flip pancake over and cook other side until golden brown. Repeat until batter is gone.

My batter made 5 medium/large pancakes.
