Almond Millk Eggnog :)

6 eggs2 egg yolks1/4 cup sugar1 1/2 tsp stevia plus1/4 tsp salt8 cups almond milk (divided)1 TBS vanilla1/2 tsp Nutmeg
Place eggs, yolks, sugar, stevia and salt in blender and blend on low until combined (if using sweetener besides powdered stevia you can just use a whisk, I had to use the blender because my stevia clumped). Pour into a large saucepan and slowly whisk in 4 cups almond milk. Cook over low heat 20-30 minutes until it's thick and coats the back of a spoon.
Strain into a large bowl and place plastic wrap on top to prevent a film from forming. Refrigerate for at least 3 hours and up to 2 days.
Mix with 4 more cups almond milk to thin before serving.
