Mushroom/Spinach Omelette

Ingredients
Egg, fresh, 1 large (remove)Egg substitute, liquid (Egg Beaters), .5 cup (remove)Spinach, fresh, 1.5 cup (remove)Mushrooms, fresh, 3 medium (remove)*Athenos Reduced Fat Feta Cheese, 1 oz (remove)Salt, 1 dash (remove)Pepper, black, 1 dash (remove)Red Ripe Tomatoes, .5 plum tomato (remove)
Directions
Beat egg with egg whites and add salt and pepper. Pour into omelette pan and move around until set. Add spinach, mushrooms and feta cheese. Cook a couple more minutes until veggies and cheese are warmed through. Fold omelette in half and place on place to serve.
