Banana Muffins

1/2 cup butter or margarine, softened1/2 cup brown sugar, packed2 very ripe bananas, mashed1/4 cup milk1 tsp vanilla extract (can use another extract of your choice)2 eggs1 cup whole wheat flour1 cup all-purpose flour1 tsp baking powder1 tsp baking soda1/8 tsp salt1/2 cup raisins1/2 cup apple, finely chopped
1) Preheat oven to 375 F. Grease muffin tin or line with paper liners.
2) Cream together brown sugar and butter in a large bowl.
3) Add in mashed banana, milk, vanilla, and eggs. Blend well.
4) Add both flours, baking powder, baking soda, and salt. Stir only until flour is barely incorporated. Add raisins and apple, and mix in. Do not over mix! Leave batter slightly lumpy. Fill each muffin tin 2/3 full.
5) Bake in oven for 20 - 25 minutes. Muffins are done when a toothpick inserted in the centre comes out clean.
*makes about 17 muffins
