Beef Goulash Soup

3 T Olive Oil3 Onions - Sliced thin in rings1 clove Garlic m- finely chopped2 t Paprika1 lb Ground beef3 c. Beef Stock1/2 t Salt1/2 t Pepper2 med Yukon Potatoes (or 5 sm Red) - Sliced thin in rounds28 oz Stewed tomatoes
- In a 4 qt. Dutch Oven saute onions and garlic in hot oil until lightly browned.
- Add paprika; cook 1 minute
- Stir in ground meat; saute until browned. Drain of excess fat
- Gradually add in beef stock and seasoning; cover and cook for 10 minutes.
- Add potatoes and tomatoes; cover and and let simmer 20 minutes or until potatoes are done.
Makes 6 - 1 1/2 cup servings
