Sam's Breakfast Casserole

Ingredients
1 (12oz) package shredded hashbrowns, thawed1 lb sausage1/2 c onion, chopped1/2 c green pepper, chopped8 eggs, beaten1 (6oz) package shredded cheddar cheesesalt & pepper to tastewhatever other veggies you want
Directions
Grease 9x13 pan, spread hashbrowns in bottom of pan.

Saute sausage, onion & green pepper. Combine eggs and salt/pepper; add sausage mix. Pour over potatoes, sprinkle with cheese.

Refrigerate overnight.

Bake at 350 for 45 minutes or until done.

    I made this tonight and added some milk to scramble the eggs and found it to be very light, although I do wonder about the calories, seems a bit low for a 9X13 yielding only 6 servings. *update* cals refigured /8 srv = 315 . Use 1.3 serving for when adding to nutrition tracker. - 11/12/12
