Directions
1 large egg1/2 cup egg replacer1/3 package (9oz) frozen artichoke hearts, thawed1 oz. soft goat cheese2 tbsp. hormel bacon bits2 tbsp fresh basilMrs. Dash original blendpepper
Put egg and egg replacer in bowl and scramble with fork. Set aside. Heat small nonstick pan over medium high heat and spray with cooking spray. When hot, add artichoke hearts and bacon bits. Cook, stirring constantly, just until warmed - about 1 -2 minutes. Remove from pan. Add egg mixture to hot pan and let set on bottom, lift sides up to let it "run" to bottom of pan. Continue doing this until mostly set. Sprinkle with Mrs. Dash, and pepper. Arrange artichoke hearts on 1/2 of egg, follow with bacon bits, dot with goat cheese, and chopped fresh basil. Flip egg half over the ingredients and turn off heat. Leave in pan to slightly melt cheese. Cut in half and serve immediately.
