Black and Red Bean Chili

Ingredients
2 t. olive oil1 onion, chopped2 large carrots, chopped1 red bell pepper, chopped2 cl. Garlic, minced¼ c. chili powder1 t. ground cumin1 28 oz can crushed tomatoes2 15 oz cans black beans drained and rinsed1 15 oz can pinto beans drained and rinsed1 T. honey or maple syrup2 5 oz cans diced green chilis1 ½ c. water1/3 c. corn
Directions
Heat oil in large pot over med heat. Add onion, bell pepper, carrots and garlic. Cover and cook to soften, 5-7 min. Stir in chili powder, cumin, tomatoes, beans, honey chilies and water. Bring to boil and reduce heat to low. Cook 45 min. Stir in corn and warm through.
