Heuvos Ranchero Spanish Tortilla

Ingredients
non-stick spray1 baked potato1 egg2 oz low fat milk2 tbls salsaham (optional)low fat cheese (optional)Spray a fry pan with cooking spray. Slice baked potato and add to pan in one layer. Brown potato and turn to brown on other side. Beat egg with milk and Salt and pepper to taste. Pour egg mixture over potatoes and cook until set. Spoon salsa over potates and eggs. and cover pan. Cook until salsa is hot and eggs are totally set. Slide onto a plate and enjoy!
