Whole wheat flax, apple, peanut muffins

1/4 cup milled flax seed3/4 cup whole wheat flour3/4 cup white flour1/2 cup sugar2 tsp. baking powder1/2 tsp. baking soda1/2 tsp salt1 egg, beaten1 1/2 cups finely chopped apples3 Tbsp. Canola oil1/2 cup 1.5% milk1/2 cup Teddie super chunky natural peanut butter
Stir dry ingredients together in large mixing bowl. In seperate bowl, mix egg, canola oil, milk, and peanut butter until peanut butter is well mixed in; also stir the apples into this mixture - stir really well. Make a well in the dry ingredients, pour in the liquid mix and stir just 'til combined. Batter will be thick. Fill greased muffin cups (I just grease with the Canola oil.).
Bake at 400 degrees for 18-20 mins. (or until muffin top springs back when touched).
This makes 12 muffins...and they are so good for you!
