Candied Ginger Sweet Potatoes

Ingredients
4 lb. sweet potatoes, peeled and cubed2 Tablespoons olive oil1/2 cup maple syrup1/3 cup chopped crystallized ginger1/3 cup apricot jam2 Tablespoons butter1/2 teaspoon salt
Directions
Place sweet potatoes in a 15x10 baking pan. Drizzle with oil. Toss to coat. Bake uncovered at 450 for 30 minutes. Stirring twice.

In microwave safe bowl, combine the remaining ingredients. Cover and microwave on hig for 1-2 minutes or until heated through. Pour over sweet potatoes; toss to coat.

Bake 10-15 minutes longer or until tender.
