Lentil Stew (south beach #1)

Ingredients

2 C dry lentils2T olive oil1 med onion3 stalks celery2 x 14.5 oz cans fire roasted tomatoes4C vegetable broth1/4 t tumeric and cumin (I added more cumin)1t chili powder (I also added some garlic salt)10-15 drops hot sauceoptional garnish--lime and cilantro
bring lentils to boil in 4 C water. turn off, steep for ~20 min
dice onion and cook in oil (dp in soup pot...)
chop celery and add, cook until soft
Add tomatoes, broth, and spices...cook until hot
add lentils/remaining water to soup stuff
I cooked on low heat for maybe 30' to get flavor into lentils
garnish if desired with lime and cilantro
