chorizo egg bake

Ingredients
10 eggs (or 2.5 C egg substitute)medium onionred pepper4 oz chorizo1 c grated cheese1/2 C cottage cheese (I used 1%)
Directions
dice meat and saute onions and other veggies (I used pepper)
layer meat, cheese, and veggies in 8x8 pan
mix egg substitute with cottage cheese and seasonings
pour into dish and mix gently

cook at 375 for about 25 minutes (much longer if you refrigerate overnight!)
