Sweet Potato Bake

Ingredients
1 lge wweet potato, peeled and chopped 1/2 apple, medium size, cored and thinly chopped1 tsp cinnamon1/4 cup walnuts, chopped1/4 cup oatmeal1/4 cup quinoa, pre-cooked1/4 cup water1/4 cup apple juice, unsweetened
Directions
Pre-cook chopped sweet potato in microwave til tender, but not completely done (approx 2 min)
In mixing bowl combine and mix together all ingredients.
Divide into fourths and put in individual serving dishes.
Bake uncovered for approx. 45 min. Cover with a piece of foil after baking to keep moist til serving time.

Note: Place a small dish of water in when baking and the potatoes won't dry out.
