Cranberry Walnut Rice Pudding

3 cups cooked, cold brown rice3 cups rice milk or soy milk3/4 cup brown sugar, packed2 tsp vanilla extract1 TBS cinnamon1 TBS nutmeg1 cup Craisins, finely chopped1/2 cup walnuts, finely chopped
In a large stock pot mix all ingredients but Craisins and walnuts. Stir well. Bring to a simmer over medium low heat, uncovered, and continue to simmer until rice begins to disintegrate, about 30 minutes. Stir often. Once at desired consistency, add nuts and Craisins.
