Egg breakfast muffins

Ingredients
3 large eggs4 large egg whites1/2 cup chopped green onion1.5 cups chopped fresh or frozen brocolli2 tbsp half & half3 oz smoked cheddar cheese shredded12 slices Canadian bacon Salt and pepper to taste
Directions
Pre heat oven to 350 degrees. Beat eggs, egg whites, green onions, half & half and chopped spinach into a mixing bowl.

Spray a muffin tin with non stick spray. Put 1 slice Canadian bacon in the bottom of each muffin cup. Divided egg mixture evenly in cups. Divided shredded cheese evenly on top of egg mixture
Makes 1 dozen large muffins or 2 dozen mini muffins.
