Mexican Tortilla Casserole W/Rice

1 lb. ground turkey1 cup mild or medium salsa1 cup brown rice, cooked1 cup fat-free refried beans1 cup grated carots2 cups shredded cheddar cheese4 whole grain large tortillas
Preheat oven to 400 degrees. Brown ground turkey in deep fry pan. Add carrots. Cook until carrots become tender. Add salsa, refried beans, and rice. Stir together over med-low heat until hot. place one tortilla in round casserole dish (I had to cut mine in fourths to fit) and spread one fourth of the mixture on top, sprinkle with one fourth of the cheese. Repeat layers, ending with the last tortilla and some of the cheese on top. Bake for 25 to 30 minutes. One serving equals one eighth of casserole. (cut in half, then half again, then half again)
