BBQ Chicken Salad

1 tbsp Extra Light Mayonnaise1 tbsp 0% fat Greek Yoghurt1 tbsp BBQ saucegarlic, to taste (I use one clove per three servings)1 tbsp chopped parsley1 tbsp chopped chives2 cups mixed chopped salad100g grilled skinless chicken breastLemon juice (to taste)Water (to thin it down if required)
Mix the mayonnaise, Greek yoghurt, BBQ sauce, garlic, chives and parsley. Season to taste with lemon juice and salt and pepper.
Add some water if you want to thin it out a bit. Leave it for a few minutes for the flavours to mingle while you cook your chicken.
Grill your chicken with whatever seasoning you like then roll in the dressing, slice and place on top of the salad.
This recipe serves one, but can be easily increased.
