Rose's Fat Flush Soup

Ingredients
1 pound lean ground beef (or turkey)2 C. V8 juice ( can use Lo Sodium)2 C Water1/2 onion chopped1 10 oz pkg frozen Spinach - chopped1 C green beans, chopped2 garlic cloves, minced1/2 green pepper chopped1 stalk celery chopped.
Directions
Makes 4 servings - freeze any leftovers for additional meals, or double the recipe and freeze.

Brown meat in skillet over medium heat
Drain fat
Combine all ingredients in a large pot
Cook over low-medium heat for about 1 hour.

For Carb/Protein Balance, you can add 17 grams carbs worth of crackers.

    This soup is delicious. I have just started really trying to lower my sodium intake and thought it would be bland--I used low sodium V-8--but it is great. I also threw in some leftover chick peas and a little cooked macaroni that was in the fridge. Thank you for this recipe. - 1/27/11

    um... "This Vegetable Soup is great to freeze and reheat." but the first ingredient is ground beef. i'm just sayin' as a vegetarian, i found the description to be misleading. you could just call it vegetable beef. - 1/4/11
