Quinoa Pudding

Ingredients
2 c. almond milk3/4 c. quinoa (uncooked)1/4 c. sugar1/4 tsp. salt1 cinnamon stick1/4 c. flour2 eggs
Directions
Combine almond milk, quinoa, sugar, salt, & cinnamon in saucepan. Bring to boil, then lower heat and simmer 15-20 minutes, till quinoa is tender and liquid has thickened.

Remove from heat and whisk in flour. Let cool a bit, then whisk in eggs one at a time, being careful not to let them scramble.

Return to heat and cook 5 minutes more over med. low flame. Mixture should be quite thick.

Pour into ramekins and chill before serving.
