1 Box Pacific Foods Curried Red Lentil Soup2 c. frozen California blend style veggies2 oz. reduced fat paneer, cubed1/2 c. water1 c. black beans, from can, rinsed and strained
pour water into a small skillet and heat on stove-top over medium heat. add paneer and cook alone for 2 min. flip paneer cubes, add frozen veggies, cover and continue to cook over med-low for 3-5 minutes, until veggies are done.
meanwhile, pour soup into a sauce pan and warm over low to med-low heat. add black beans and continue to warm over low to medium heat. once veggies are done, strain veggie/paneer combination, then add to soup.
tastes great served as is, or topped with chives, scallions, goat cheese, crumbled walnuts, or whatever else suits your fancy.
