Baked Cod Fondue

Ingredients
Cod (fish), 16 ozMilk, canned, evaporated, 1.5 cup *Margarine, soft, .25 cup Basil, .0625 tbsp Pepper, black, 0.625 tbsp *Flour, white, .25 cupParsley, dried, 1 tsp Cheddar Cheese, Low Fat, 1 cup, shredded
Directions
Preheat oven to 350 degrees F. Lightly grease a 1.5 quart casserole (with lid).

In a saucepan, combine cod and milk. Cover and simmer until fish flakes easily. Drain reserving liquid. Flake cod into prepared casserole.

In a saucepan, melt 1/4 cup butter or margarine. Blend in a mixture of 1/4 cup flour, pinch of basil, pinch of pepper.

Sprinkle over cod: 1 cup grated cheddar cheese, 1 tsp dried parsley flakes. Pour hot sauce over top and bake in preheated oven for 15-20 minutes, or until heated through. Makes 3-4 servings.
