Warm Spinach Salad

Ingredients
10 oz fresh baby spinach 4 slices turkey bacon2 minced shallots1 Tbs olive oil2 Tbs balsamic vinegar
Directions
Slice turkey bacon into lardon shapes, brown in a non-stick pan. Set aside.

Into the empty skillet add oil and shallots for 3 miutes. Add vinegar for a couple more minutes. Top spinach in a serving bowl with oil and vinegar dressing. Toss to coat.

Add turkey bacon, salt and pepper. Ready to serve.
