3 tablespoons olive oil1 large red bell pepper, chopped1 onion, chopped3 garlic cloves, finely chopped3/4 cup dry white wine1 ( 28-ounce) can diced tomatoes with juice3/4 cup reduced-sodium chicken broth3 tablespoons drained capers1 1/2 teaspoons dried oregano leaves1/4 cup coarsely chopped fresh basil leaves
Add the bell pepper, onion and garlic to the sauce pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer.

This recipe is fantastic and authentic. I hope you will pardon me for my makeover. There seemed to be some ingredients in the calorie count which were not included in the recipe. I also changed it to reduce the oil and make a thicker sauce, since I like it with sausage and served over polenta. - 12/30/11
